Zucchini Noodle Pad Thai

Ingredients

  • check
    ​2 Large eggs
  • check
    ​1/4 cup salted peanuts
  • check
    1/2 tbsp of your favorite oil
  • check
    1 clove of garlic, minced
  • check
    1 shallot or onion, minced
  • check
    1 tbsp coconut flour
  • check
    1 tbsp chopped cilantro & whole leaves for the garnish

    2 medium zucchinis, Blade C
​For the sauce:
  • check
    ​2 tbsp lime or lemon juice
  • check
    ​1 tbsp fish sauce (or hoisin sauce, if you're a strict vegetarian)
  • check
    ​1/2 tbsp soy sauce
  • check
    1 tbsp chili sauce or other favorite Asian hot sauce
  • check
    1 tsp honey

Instructions:

  1. ​After scrambling and storing the eggs in the refrigerator, place all of your sauce ingredients into a small bowl, whisk, and store.
  2. Grind the peanuts in a food processor until roughly chopped.
  3. Heat oil in a wok over medium heat and start to cook the garlic and shallot/onion. Cook for 2 minutes, until the shallot begins to soften or the onion becomes transparent. Add the sauce, whisking so that the flour is able to thicken the sauce. Cook until the sauce is reduced, around 3 minutes.
  4. Add your zucchini noodles and cilantro to the thickened sauce and stir until everything is thoroughly mixed.
  5. Cook until the zucchini begins to soften before adding the eggs and peanuts. Remove from heat & stir until everything is coated in sauce. Be sure not to over cook the zucchini or they will release water and dilute your sauce.
  6. Plate and serve with a lime wedged and whole cilantro leaves.
